A YOUNG butcher has scooped a coveted industry award for his superior knife skills. Matthew Lee was named Apprentice of the Year by the Meat Training Council, after impressing judges with his knowledge and his guide to preparing meat for display.

A YOUNG butcher has scooped a coveted industry award for his superior knife skills.

Matthew Lee was named Apprentice of the Year by the Meat Training Council, after impressing judges with his knowledge and his guide to preparing meat for display.

The ambitious butcher has worked at Cottage Farm Quality Meats, in Badgers Mount, since 2007.

He will collect the award next month.
